This was actually my first time making the coconut oatmeal cookies and I really love how well they came out. It wasn’t too sweet and the coconut was nice and subtle. I’m thinking next time I might throw in some milk chocolate chips for extra flavor.
Crispy coconut shrimp has always been a favorite of mine. I normally like to bake it, but I know some people who like to fry it. I think both ways come out tasty… but baking it is a little less messy, and of course a bit healthier as well (if you care about that sort of thing).
