Crab Cakes for Mother’s Day
I don’t cook for my mother very often. The reason is because she is an amazing chef, and the rest of the family would rather eat her cooking than mine. This year for mother’s day however, I firmly put my foot down, and declared that my sister and I would be making dinner (actually it was really me who made dinner). We chose a recipe for pan-fried crab cakes with chili-lime dressing, mango-cucumber relish, and mixed greens from Emeril's Delmonico Cookbook. It turned out fabulous. The crab cakes were tender and meaty; the mango-cucumber relish offered pleasant mouthfuls of sweet and savory tastes; and the chili-lime dressing supplied a delicious kick that tied up the entire dish nicely.
